I can always tell by looking at a sauce if I'll like it.
Anyone know what I mean?
The look of this one is almost 'creamy' but it's not actually creamy and has no dairy, of course. I just love the way they look and always know.
This is a peri-peri sauce that has delicious notes of ginger, hot peppers (Thai, jalapeños, Fresno), garlic and some acidity to round it out. I taste the ginger at first, which I love. The texture is not chunky at all but is thicker than many other sauces. Flecks of red peppers come through.
The heat is medium but don't be fooled. It's got a nice mouth burn that lasts but is not overpowering. Both experienced chili heads and newbies will enjoy.
When I think peri-peri my head goes to chicken. This would pair wonderfully with that, especially if you make hot wings with it.
I can also see myself using this when I cook a white, flaky fish or seafood stew. Peri peri was popularized by Portugal, so think foods from that region.
I really like this sauce and find it to be very versatile and different from many other sauces out there. It's always fun to try new ones.
